Nana's Zucchini Bread

Ingredients

  • 1 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 large eggs
  • 2 cups grated zucchini (about 2 medium size zucchinis)
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ tsp nutmeg
  • 1 cup chopped walnuts, pecans,chocolate chips, raisins or mini chocolate chips or you can leave it out
  • I like to do 2 mini's with and 2 out
  • I do the same when making banana bread
  • One of our granddaughter's does not like the nuts in them

  • Need to watch how much sugar try
  • ½ cup more zucchini and cut the sugar by ½ cup.
  • cut the oil by ½ cup and substituted unsweetened applesauce for the rest of the oil
Steps
  1. Instructions
  2. Mix together the oil, sugar, eggs, vanilla and zucchini in a bowl. Set aside.
  3. In a separate bowl, mix together the flour, salt, baking soda, baking powder and cinnamon and nutmeg
  4. Add the wet ingredients to the dry ingredients and mix just until combined. I like to use my stand mixer
  5. Grease two loaf pans or 4 mini loafs pans
  6. Split the batter between the two pans.
  7. Bake at 325 degrees for 1 hour for the loaf pans
  8. Bake for 45 minutes for the mini loaf pans or the muffins
