Ingredients

- 1 cup oil
- 2 cups sugar
- 2 teaspoons vanilla
- 3 large eggs
- 2 cups grated zucchini (about 2 medium size zucchinis)
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ tsp nutmeg
- 1 cup chopped walnuts, pecans,chocolate chips, raisins or mini chocolate chips or you can leave it out
- I like to do 2 mini's with and 2 out
- I do the same when making banana bread
- One of our granddaughter's does not like the nuts in them

- Need to watch how much sugar try
- ½ cup more zucchini and cut the sugar by ½ cup.
- cut the oil by ½ cup and substituted unsweetened applesauce for the rest of the oil
Steps
- Instructions
- Mix together the oil, sugar, eggs, vanilla and zucchini in a bowl. Set aside.
- In a separate bowl, mix together the flour, salt, baking soda, baking powder and cinnamon and nutmeg
- Add the wet ingredients to the dry ingredients and mix just until combined. I like to use my stand mixer
- Grease two loaf pans or 4 mini loafs pans
- Split the batter between the two pans.
- Bake at 325 degrees for 1 hour for the loaf pans
- Bake for 45 minutes for the mini loaf pans or the muffins
