Chocolate banana muffins

Ingredients
  • 3 ripe medium bananas
  • 3 eggs
  • 1 tsp vanilla
  • 3 Tbsp maple syrup
  • 3 cups organic baby spinach
  • 2½ cups almond flour
  • ½ cup cacao powder
  • 1 tsp baking soda
  • Pinch of salt
  • Optional: ½ cup chocolate chips
Steps
  1. Blend together all of the ingredients (except chocolate chips) I’m a good processor or high speed blender until smooth.
  2. Spoon the batter into a lined or greased muffin tin and add chocolate chips on top of using.
  3. Bake at 350°F for 17 to 20 mins or until toothpick comes out dry. Let cool and enjoy!
