- 4 boneless skinless chicken breasts (I butterflied two large breasts to make 4 thin breasts)
- 1 medium size onion chopped
- 1 teaspoon garlic powder (I used Auntie Nono's Everything Seasoning - it has salt, garlic, and onion powder)
- 1 teaspoon pepper
- 8 slices Swiss cheese (I used 2 cups shredded Swiss & Guyere)
- 1 1 ⁄2 cup dry stuffing mix (I used one box of Stove Top style stuffing mix)
- 1 stick melted butter
- 1 can can Rotel (or any diced tomatoes with chilies)
- 1 can cream of mushroom soup
- 1 cup chicken broth
