Bigos z cukini - courgette stew.

Ingredients
  • subheading: Meat:
  • 60g smoked streaky bacon (about 4 rashers)
  • 60g Chorizo
  • 340g Danish Ham Tinned
  • 165g pork loin steaks (or some other meat)
  •

  • 100g mushrooms
  • 70g celery sticks
  • 740g courgette
  • 100g shallots
  • 400g canned tomatoes
  •  
  • subheading: Spices:
  • 1tsp Hot Paprika
  • 2tsp Smoked Paprika
  • Salt and Pepper to taste
  • 1 stock cube (smoked or pork) mixed with 500ml of water
Steps
  1. subheading: Prep Veggies:
  2. Chop mushrooms into eights
  3. Slice celery sticks and shallots
  4. Dice courgettes
  5. subheading: Prep meat:
  6. Slice chorizo into half-moon
  7. Dice bacon
  8. Chop ham and pork loin into a bite size pieces
  9. subheading: Cooking:
  10. To a large non stick pot add in chorizo and bacon without oil. Bring it to a medium heat and render the fat.
  11. Add shallots and fry them until soft and golden.
  12. Add in pork loin (or other meat) and fry it.
  13. Add in tinned ham and fry some more.
  14. Add in all the veggies, 1 can of tomatoes and the stock cube.
  15. Cook for about 20 minutes.
  16. Add in the spices
  17. Cook for additional 10 minutes or until veggies are soft.
