One Pot Mexican Quinoa Chili (Vegan & Gluten Free)
Ingredients

  • 3 small tomatoes (diced)
  • 1 large red bell pepper (finely diced)
  • 5 large white mushrooms (finely chopped)
  • 1 + ¼ cup tomato sauce
  • 2 cups vegetable broth
  • 1.5 cups dry quinoa
  • 2 cups cooked black beans (or 1 15oz. can)
  • 1.5 cups frozen or fresh corn
