Ingredients
  • ½ cup natural-style peanut butter, room temperature
  • ½ cup margarine of choice or whipped butter, room temp, @ 8 grams per TBSP
  • ½ cup brown sugar, packed measure
  • 1 teaspoon vanilla paste or extract
  • 1 large egg, room temp (pasture-raised if available)
  • ½ cup whole wheat flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  •  
  • OPTIONAL: ½ teaspoon ground cinnamon
  • ½ cup old fashioned oats (quick-cooking oats can also be used)
  • ½ cup semisweet chocolate chips (or chocolate chips of choice)
  • ½ cup shredded unsweetened coconut
  • ½ cup roasted peanuts (can be salted), i.e. redskin Spanish peanuts
