Cinnamon Swirl Banana Bread

Ingredients

  • 3 very ripe bananas smashed up
  • ⅓ cup melted butter
  • ¾ cup sugar
  • 1 egg beaten
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ⅛ tsp ground cloves
  • ⅛ tsp nutmeg
  • Pinch of salt

  • ⅓ cup sugar
  • 1 tbsp cinnamon
Steps
  1. Preheat the oven to 350 degrees. Coat a small loaf pan with cooking spray.
  2. Mix the mashed bananas, butter, sugar, egg, and vanilla together with a beater until creamy.
  3. Combine the flour, baking soda, cinnamon, cloves, nutmeg, and salt together in a separate bowl then mix well.
  4. Gently add the flour mixture into the banana mixture until just combined. Don't over mix.
  5. Mix together the ⅓ cup sugar and 1 tablespoon of cinnamon.
  6. Add half of the batter to the loaf pan and then sprinkle more than half of the cinnamon-sugar mixture all over the batter in the pan.
  7. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  8. Bake for 55 to 65 minutes, or until a tester inserted into the center comes out clean.
  9. Remove from the oven then let it cool for a few minutes before transferring to a cooling rack to finish cooling. Slice and serve with butter if desired.
