Rice Paper Bacon (vegan) (oil-free)

Ingredients
  • 2 large sheets of rice paper
  • 1 tsp liquid smoke
  • 2 tbs soy sauce
  • 2 tbs nutritional yeast
  • 1 tsp sugar
Steps
  1. Have your oven heated to 350F and your sheet pan lined with parchment paper or silicone baking mat
  2. Fill a shallow dish large enough to submerge the rice paper sheets with hot (not boiling) water
  3. Dip sheet of rice paper into hot (not boiling) water for a few seconds, just long enough so you can cut it with scissors without it cracking, like 5 seconds
  4. Using scissors, cut rice paper sheet into strips about 2" wide
  5. Put the strips one at a time into the hot (not boiling) water until they are just soft enough to bend without cracking, maybe 10 more seconds
  6. Pull each strip out and wipe off the water with your fingers
  7. Dip in marinade, coating well
  8. Place strips on silicone lined baking sheet. Lay them flat, but it's ok if the edges fold over a little bit
  9. Bake 10 minutes at 350F
  10. Use a spatula to peel the strips off of the pan, turn and pinch them a little on the edges to make them "wrinkly"
  11. Bake five minutes more
  12. Store leftovers in an airtight container
