Ingredients
  • 16 ounces pasta of choice
  • 2 tablespoons extra virgin olive oil - divided
  • 1 cup diced onion
  • 2 cloves garlic - minced
  • 8 to 10 ounces roasted beets - about 3 small beets; can also use canned beets
  • ¼ cup reserved pasta water - don't forget this!!
  • ¾ cup ricotta cheese - whole or part skim
  • ½ cup goat cheese
  • 3 tablespoons lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
