Ingredients
  • 1 Tablespoon avocado oil
  • 3 links chicken andouille sausage links*, sliced & halved *Optional: Subtract 1 sausage add 1⁄2 pound cooked wild shrimp
  • 1 chicken breast, diced (or use 1 cup cooked shredded or diced to save time)
  • 1⁄2 large red onion, diced
  • 3 cloves garlic, minced
  • 1 celery stalk, chopped
  • 1⁄2 - 1 jalapeño, minced (optional- amount depending how spicy you like it)
  • 1 (15 ounce) can kidney beans, rinsed & drained
  • 1⁄2 cup frozen sweet corn
  • 1 cup frozen sliced okra
  • 1 (15 ounce) can diced tomatoes
  • 3 Tablespoons tomato paste
  • 2 Tablespoons salt free Cajun seasoning (amount depending how spicy you like it)
  • 1 bay leaf
  • 1 Tablespoons fresh chopped oregano
  • 1 1⁄2 cups cooked brown/wild rice medley
  • 4 different colored bell peppers, halved & seeds removed
  • Fresh parsley, for garnish
