Ingredients
- 1 lbs. frozen sweet corn
- ¾ cup milk of choice
- 1 tbsp extra virgin olive oil
- ¼ medium-sized onion (chopped)
- 1 tbsp maple syrup
- 1 tbsp ground flax seed
- 1½ tsp minced garlic
- salt (adjust to taste)
- black pepper (adjust to taste)
Steps
- Sautee onions in oil for 4 minutes and then add garlic and fry 1 minute longer.
- Reduce heat to medium, add corn, and cook for 8 to 10 minutes. You want to make sure the corn is completely thawed and hot.
- Add the milk, flax, remaining seasonings and stir gently to combine. Let cook for 5 to 6 minutes after stirring.
- Remove ½ of the mixture to a blender and blend until smooth (or use an immersion blender in the pot itself). Pour this mixture back into the skillet with the whole corn kernels and heat for a few minutes.
- Remove from heat and let cool to use in cornbread.
