Ingredients
  • 4 bone-in chicken thighs, skin on
  • 1 carrot, cut into two
  • 1 stick of celery, cut into two
  • 1.7 litres cold water
  • Olive oil, for frying
  • 2 garlic cloves, finely chopped
  • 3cm knob of ginger, grated
  • 1 banana shallot, peeled and finely sliced
  • 2 lemon grass stalks, halved, outer skin removed and finely chopped
  • 1 red chilli, chopped (include the seeds)
  • 2 spring onions, sliced
  • 1 small leek, sliced
  • Handful of baby spinach
  • Handful of mint
  • Handful of coriander
  • Fish sauce, to taste
