Salsa Fry-Up

Ingredients
  • 1.5 c brown rice (uncooked)
  • 1 lb. ground beef
  • 3 c. finely chopped cabbage
  • 1 small onion (opt)
  • 1 c. frozen corn
  • ¼ tsp. salt
  • 1 tsp. cumin
  • ½ tsp chili powder
  • 1 c. salsa
Steps
  1. Cook rice.
  2. Brown ground beef and onion, if using. Add oil if needed.
  3. Add cabbage.
  4. Add corn, spices, and salsa. Heat through.
  5. Finally, stir in cooked rice.
