Pita Pizzas with Olives and Feta
Ingredients
  • 4 6-in. whole-wheat pocketless pitas
  • 1 tablespoon olive oil
  • 1 cup prepared hummus
  • 1 15-oz. can chickpeas, drained and rinsed
  • ½ cup kalamata olives, pitted and halved
  • 1 small red onion, thinly sliced
  • 6 ounces feta cheese, crumbled (about ¾ cup)
  • ¼ teaspoon crushed red pepper (optional)
  • ¼ cup coarsely chopped fresh mint or oregano
