Pink Peppercorn and Parsley Coated Goat Cheese

Ingredients
  • 1 log (11 oz) plain goat cheese
  • 2 tbsp extra-virgin-olive oil
  • ¼ cup whole pink peppercorns, coarsely crushed
  • 1 cup finely chopped Italian parsley
  • Fresh figs, cut in half
  • Dried whole apricots
  • Sliced baguettes
  • Apple and/or pear slices
Steps
  1. Brush all sides of cheese with olive oil. Combine the peppercorns and parsley on a piece of parchment or wax paper. Roll the goat cheese log in the peppercorn-parsley combination, coating evenly on all sides. Transfer to a serving platter and chill until ready to serve.
  2. Surround the goat cheese log with figs, apricots, bread slices and apple and/or  pear slices.
