Ingredients
  • 7 or 8 beef or chicken sausages
  • ¼ cup brown sugar
  • ¼ cup vinegar (or a little less)
  • 1 can diced tomatoes
  • 1 teaspoon minced ginger
  • 1½ cups beef stock
  • Salt & pepper to taste
  • 2 tablespoons curry powder
  • 3 or 4 bay leaves
  • Paprika, small amount
  • Nutmeg, small amount
  • Onion powder, not too much
  • 4 or 5 potatoes, cubed fairly large
  • 2 onions, roughly chopped
  • 2 celery sticks, sliced thickly
  • 2 carrots, halved lengthways and then sliced thickly
  • Cauliflower, cut into large florets
  • Peas and corn
  • Green beans
  • (Other vegetables, as desired - see notes)
Steps
  1. Brown sausages in frying pan. Cut into bite sized pieces.
  2. Mix together brown sugar, vinegar, can of tomatoes, garlic, beef stock, salt & pepper, curry powder, bay leaves, paprika, nutmeg and onion powder. Stir well until all combined and pour into slow cooker or casserole dish.
  3. Add prepared vegetables, except peas, corn and beans.
  4. Cook on high for approximately 1 hour.
  5. Reduce temperature to low and cook for 4 to 6 hours or until vegetables are nicely tender.
  6. About 20 minutes to ½ hour before serving, add peas, corn and green beans.
  7. Serve with mashed potatoes or rice.
Notes
  • Any vegetables can be added - pumpkin, broccoli, zucchini, cabbage or mushrooms are particularly nice.
  • Also, mashed potato spread on top and placed in the oven in a casserole dish prior to serving is lovely.
  • Sprinkle grated cheese over mashed potatoes, if desired and bake in oven until cheese is melted and golden brown.
