Salmon Patties
Recipe from Grandma Modene Smiraldo

Servings: 4

Servings: 4
Ingredients
  • 1 Lg Can Salmon (I prefer Red, but Pink will work - it's just a slightly different taste)
  • ¾ Cup Dry Bread Crumbs, Plain
  • ¼ Cup Flour
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • ⅓ tsp Black Pepper
  • 1 Lg Egg
  • ⅓ Cup Milk
  • Oil for cooking
Steps
  1. Clean and flake the salmon, removing all the skin and unidentifiable yuck (I do this under cool running water over the waste disposal/in-sink-erator. Canned/cooked salmon bones are very soft, and not at all dangerous to eat so I just smash them up and mix them in. Very healthy!
  2. Add all the other ingredients and stir until thoroughly mixed.  Let rest 5 minutes.
  3. Meanwhile, heat up a large skillet with enough oil to cover the bottom of the pan.
  4. Using a fork, section off about ⅓ of a cup of the salmon mixture and form it into a ball.  Transfer the ball to the pan and use the fork to flatten it into a patty.  Repeat until you have several in the pan, and cook several minutes until well browned, turn and cook until the other side is also well browned.
  5. Drain on paper towels.
Notes
  • Pairs well with Au Gratin Potatoes and any vegetable you like.
