Quinoa Pizza Bites
Ingredients
  • - 1 cup cooked quinoa (about ⅓ uncooked)
  • - 3 eggs
  • - 1 cup of your favorite Italian cheese blend
  • - ½ teaspoon of Italian seasoning
  • - ¼ teaspoon salt
  • - (Optional: Feel free to add any diced veggies, meats or pizza topping of your liking)
  • - ½ cup of your favorite tomato/pizza sauce (warm for dipping)
Steps
  1. - Preheat oven to 350°F. Lightly coat 12 cup muffin tin with nonstick cooking spracy
  2. - In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
  3. - Bake for 20 to 25 minutes of until golden brown. Serve with warm pizza sauce and enjoy!!
