Ingredients
- ½ teaspoon salt
- 1 teaspoon coarse ground black pepper 1 teaspoon cumin
- ½ teaspoon cayenne powder
- ½ teaspoon smoked paprika
- Cooking spray
- 1 pound chicken breast tenders
- 2 cups yellow and green bell peppers, sliced
- 1 cup red onion, sliced
- 1 cup stewed tomatoes, chopped, juice included
- ¾ cup queso fresco cheese, crumbled
- Fresh cilantro for garnish (optional)
Steps
- Combine the salt, black pepper, cumin, cayenne powder and smoked paprika. Set aside.
- Preheat the oven to 375°F and spray an 8x8 or larger baking dish with cooking spray.
- Arrange the chicken tenders in an even layer in the baking dish and season liberally with at least half of the seasoning mixture.
- Place the bell peppers and onions over the chicken, followed by the stewed tomatoes.
- Add any remaining seasoning mixture to the top of the peppers and onions.
- Sprinkle the queso fresco cheese over the top and place the pan in the oven.
- Bake uncovered for 25 to 30 minutes, or until the chicken is cooked through. Remove from the oven and let sit for 5 minutes. Serve warm, garnished with fresh cilantro, if desired.
