Instant Fajita Casserole

Ingredients
  • ½ teaspoon salt
  • 1 teaspoon coarse ground black pepper  1 teaspoon cumin
  • ½ teaspoon cayenne powder
  • ½ teaspoon smoked paprika
  • Cooking spray
  • 1 pound chicken breast tenders
  • 2 cups yellow and green bell peppers, sliced
  • 1 cup red onion, sliced
  • 1 cup stewed tomatoes, chopped, juice included
  • ¾ cup queso fresco cheese, crumbled
  • Fresh cilantro for garnish (optional)
Steps
  1. Combine the salt, black pepper, cumin, cayenne powder and smoked paprika. Set aside.
  2. Preheat the oven to 375°F and spray an 8x8 or larger baking dish with cooking spray.
  3. Arrange the chicken tenders in an even layer in the baking dish and season liberally with at least half of the seasoning mixture.
  4. Place the bell peppers and onions over the chicken, followed by the stewed tomatoes.
  5. Add any remaining seasoning mixture to the top of the peppers and onions.
  6. Sprinkle the queso fresco cheese over the top and place the pan in the oven.
  7. Bake uncovered for 25 to 30 minutes, or until the chicken is cooked through.  Remove from the oven and let sit for 5 minutes.  Serve warm, garnished with fresh cilantro, if desired.
