Grandma Mills' Banana Nut Bread
Ingredients
  • ½ c butter, room temp
  • 1 c sugar, good quality
  • 2 eggs
  • 3 medium bananas, mashed
  • 2 c flour, good quality
  • 1 t baking soda
  • ½ t salt
  • 1 c walnuts, optional
Steps
  1. Mix butter, sugar, & eggs. Beat hard till light n creamy (w/no sugar granules left). Stir in mashed bananas. Add dry ingredients beating until smooth. Pour into greased/floured loaf pan. Bake at 350° 60 to 70 min. Remove from pan and cool on rack.
  2. Instant Pot: grease/butter/spray a pan of your choice. I use my 7" Fat Daddio cheesecake pan with removable bottom. Line the bottom w/parchment paper. Pour in batter. Pour in 1 to 2 cups water into IP liner. Place cake pan on trivet, using foil sling, close and lock lid, seal vent, manual high pressure, 50 to 60 min, 10 min NPR, then QR. Do toothpick test. Remove carefully from IP. Remove cake from pan. Let cool on rack...or not if you like it hot. Enjoy
