Moroccan-Spiced Chicken with Apricot & Almond Rice
Ingredients
  • 2 tablespoon Moroccan seasoning

  • ¼ cup almond kernels, roughly chopped
  • 3 cloves garlic, thinly sliced
  • 1 ½ cups basmati rice 1 and 1 half cups basmati rice
  • 2 ½ cups chicken stock 2 and 1 half cups chicken stock
  • ½ cup dried apricots, roughly chopped
  • 1  red onion, cut into thin wedges
  • ¼ bunch coriander, leaves picked, finely chopped
  • ½ bunch mint, leaves picked
