Banana Bread by Jimbo
IP Banana Bread
Ingredients
  • 8 oz cream cheese
  • ¾ cup  ( I used ½ C )
  • 2 ripe bananas, mashed
  • 1 egg
  • 2 tsp vanilla
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • dash salt
  • ¼ cup chopped pecans, optional

Steps
  1. Mix cream cheese and sugar until smooth. Add bananas, egg, vanilla and mix.
  2. Combine flour, baking soda, baking powder, and salt in a bowl. Slowly add the dry ingredients to the wet ingredients.
  3. Fold the chopped pecans into the batter.
  4. Pour batter into a greased 8" bundt pan, and cover with tin foil.
  5. Place a trivet in the pressure cooker, along with 2 cups of water.
  6. Set the bundt pan on top of the trivet, using a foil sling to make it easier to remove after baking.
  7. Set the pressure cooker (Instant Pot) to 30 minutes on manual.
  8. Let the pressure come down naturally.
  9. Remove the cake from the Instant Pot, and set on a baking rack to cool. (Remove foil cover from bundt pan first).
