  • 4 1⁄2 oz baby spinach (≈6 cups)
  • 10 oz broccoli chopped (≈4 cups)
  • 1 oz shredded carrots (≈1 cup)
  • 4 scallions (white & green parts) sliced (≈1⁄2 cup)
  • 1⁄4 cup fresh cilantro chopped
  • 2 tablespoons fresh mint chopped
  • sea salt
  • freshly ground black pepper
  • subheading: FOR THE DRESSING:
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons white wine vinegar
  • 2 tablespoons pure maple syrup (optional)
  • 2 tablespoons tahini
