4 Bean Chili (Gluten Free)
Ingredients
  • 2 teaspoons Olive Oil
  • 1 medium Yellow Onion peeled and chopped
  • 1 Yellow Bell Pepper seeded and chopped
  • 3 Garlic Cloves diced
  • 3 tablespoons Chili Powder
  • 1 tablespoon Cumin
  • 2 teaspoons Oregano
  • 1 Chipotle Pepper chopped
  • 1 teaspoon Adobo Sauce from the can of chipotle en adobo
  • 2 cups Low Sodium Vegetable Stock
  • 1 15-ounce can Tomato Sauce
  • 1 15-ounce can Petite Diced Tomatoes
  • 1 15-ounce can Black Beans drained and rinsed
  • 1 15-ounce can Red Kidney Beans drained and rinsed
  • 1 15-ounce can Canellini Beans drained and rinsed
  • 1 15-ounce can Great Northern Beans drained and rinsed
  • ΒΌ teaspoon Kosher Salt
  • Optional Garnish ideas: torn cilantro leaves, sour cream (if not vegan), shredded cheese (if not vegan), chopped pepper, sliced avocados
