Apple pancake cake
Moist and delicious, a great recipe to bring to a pot lock or brunch, or for a weekend breakfast

Ingredients
  • subheading: Apples:
  • 2 apples (preferably Granny Smith), cored and coarsely sliced, and sprinkled with some lemon juice
  • 30g white sugar
  • 30g butter
  • A sprinkle of black pepper
  • 2 scant tsp of cinnamon
  • subheading: Pancake batter:
  • 1 egg beaten
  • 30g sugar
  • 30ml oil
  • 150g plain yogurt
  • 140g flour
  • 1 tsp baking powder
Steps
  1. subheading: Apple filling:
  2. In a cast iron pan melt butter and sugar, add the apples
  3. subheading: Pancake mix:
  4. Beat the egg with sugar and a pinch of salt
  5. Add the oil and incorporate
  6. Add the yogurt, mix well until smooth and glossy
  7. Add the flour and baking powder, and mix well
  8. subheading: Assembly and cooking:
  9. When the apples are well coated with the butter sugar mixture add the cinnamon and some crushed, fresh black pepper. Spread the apples evenly in the pan. Pour the pancake batter over the apples and smooth out to a even layer. Cook covered for at least 10 minutes, turn over and cook covered for an additional 5 minutes.
