Spicy Maple Za'Atar Carrots
Ingredients
  • 1.5 pounds carrots (7 or 8 medium), sliced in half or quarter the long way
  • 2 to 3 tablespoons avocado oil (or other high heat neutral oil)
  • 2 tablespoons za'atar
  • red pepper flakes, to taste
  • freshly ground black pepper, to taste
  • kosher salt, to taste
  • 2 tablespoons maple syrup (or honey)
  • 1 tablespoon vinegar (white balsamic or apple cider preferred)
  • Chopped fresh parsley, cilantro, or dill (any combination is good to taste)
