Making Gourmet Mac and Cheese with Hot Dogs (Kid Food Upgrade)

  • ¼ cup butter
  • ¼ cup flour
  • 4 cups whole milk
  • ¼ tsp black pepper
  • ¼ tsp mustard powder
  • ¼ tsp grated nutmeg
  • 1 ½ tsp kosher salt
  • 8 oz shredded monterey jack cheese
  • 8 oz shredded white cheddar
  • 8 oz shredded gruyere

  • Heat butter in a large saucepot over medium heat until melted. Add flour, and stir until combined. Cook for about 3 minutes until it is a sandy consistency. Add milk, 1 cup at a time, while stirring constantly. When all the milk is added and the mixture is thick enough to coat the back of a spoon, add you salt and spices.
  • Add in the cheeses gradually, one variety at a time, while stirring constantly until combined. Adding too much cheese at once can break your sauce. Once all the cheeses are combined, turn the heat off, and reserve.

  • 5 roma tomatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ medium red onion, minced
  • ⅓ cup sugar
  • ¼ tsp black pepper
  • ¼ tsp clove
  • ¼ tsp cinnamon
  • ¼ cup red wine vinegar
  • 1 Tbsp worcestershire sauce
  • 1 ½ cups water

  • Cut your roma tomatoes in half lengthwise. Heat olive oil in a large sautee pan on medium-high heat until the oil starts to shimmer and the pan just starts to smoke.
  • Add your tomatoes flesh-side down in the pan, making sure they do not overlap. Allow the tomatoes to sear for 4 minutes, then flip, and sear on the other side for 3 minutes. The tomatoes should have some black-spotted char on them.
  • Turn the heat down to medium, then add the minced red onion and salt. Sautee for about 5 minutes, until the onions are translucent and some of that tomato juice has cooked down.
  • Use a potato masher, or a wooden spoon, to mash the tomatoes and onions until the large tomato chunks are broken up, then add sugar, clove, cinnamon, black pepper, vinegar, and worcestershire.
  • Give the pot one final stir, then add your water, and simmer for 25 minutes. Stirring every few minutes, until the liquid in the pan is almost entirely gone, and you are left with a jammy texture.

  • 8 ounces macaroni noodles, cooked
  • ⅓ cup monterey jack cheese
  • ⅓ cup white cheddar cheese
  • ⅓ cup gruyere cheese
  • 3 hot links, cut into slices
  • 1 cup panko breadcrumbs
  • ½ cup parmesan cheese
  • 2 Tbsp dried basil
  • 2 tsp smoked paprika
  • ¼ cup olive oil

  • Preheat your oven to 375 degrees. Add macaroni noodles and sausage slices to the cheese sauce, then stir to combine.
  • In a greased up casserole dish, add ⅓ of your macaroni, followed by ⅓ of all your cheeses, and a few dollops of tomato jam. Repeat this layering process two more times, finishing with a blanket of cheese.
  • Mix together panko, parm, dried basil, and smoked paprika, then sprinkle on top of the macaroni. Drizzle olive oil on top, then bake for 40 minutes, until golden brown and bubbly.
  • Let macaroni rest for 10 minutes, then cut into it and serve with more tomato jam.
