BBQ Jackfruit ribs
Ingredients
  • 1 (20 oz) can young green jackfruit in brine, rinsed and drained
  • 1 cup water or veggie broth
  • 1 tablespoon liquid smoke
  • 1 Tbls apple cider vinegar
  • ¼ cup almond butter (or any nut/seed butter)
  • Tbls oil, preferably chili oil
  •  
  • Up to 2 cups vital wheat gluten, for a soft dough
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons nutritional yeast
  •

  • Steps
  • Drain and rinse jackfruit. Add to food processor and pulse till just broken down, shreddy. Add to bowl and mix well with wet ingredients
  • Add gluten, spices, and nutritional yeast. Mix well, add more gluten if needed for a soft dough. Let rest at least an hour
  • Press dough into a 8″ or 9″ square pan lined with oiled parchment. Bake for 30 minutes.
  • (Add a couple cups water and some vinegar to pot and set to 2 min pressure to clean the pot.)
  • Remove seitan from oven and brush ⅓ cup barbecue sauce over the top. Flip seitan over and brush the remaining barbecue sauce on the other side.
  • Return ribs to the oven and bake for another 25 to 30 minutes until seitan is completely firm. Brush with more bbq sauce if desired, and serve immediately.

  • heat ¼ cup nut butter & no beef boullion with ½ cup water. Mix and add¼ hot sauce and ¼ water .
