Instantpot risotto
Ingredients
  • Mushroom Risotto
  • Serves 4
  •  
  • 10 oz of baby bella Mushrooms Large chop
  • 1 Tbs  Olive Oil
  • 2 Tbs  Butter
  • 2 Large Shallots
  • 2 Cups Arborio Rice
  • 1 Cup of white wine
  • 1 large clove garlic
  • 1 tsp. fresh thyme
  • 4 Cups Chicken Broth or (veg broth)
  • ½ cup half and half
  • 1 Cup Grated Parmesan Cheese
  •  
  • Select Sauté on pressure cooker and let get hot.
  • Add butter and olive oil, Shallots, Garlic and sauté for a min.  Add Rice sauté for 3 more mins.
  • Add wine and thyme stir a few times until the wine is absorbed.
  • Add Broth and Mushrooms
  • Close lid and set for 4 mins on high.
  • When 4 mins is up, add ½ & ½  and parmesan cheese blend until creamy.
