  • 6 cups chicken broth
  • 1.5 pounds boneless, skinless chicken breast
  • 2 dried bay leaves
  • 1 tablespoon fresh thyme
  • 1 - 9oz package refrigerated cheese tortellini (I used THIS KIND)
  • 1 ½ cups half and half
  • 1 tablespoon arrowroot starch
  • 2 cups baby spinach, roughly chopped
  • shaved parmesan, for serving
  • chopped parsley, for serving
