Cauliflower Alfredo
Ingredients
  • 1 head cauliflower, cut in to small florets
  • Avocado oil
  • Salt and pepper
  • Ground nutmeg
Steps
  1. Heat oven to 425.
  2. Toss cauliflower with oil, salt and pepper.
  3. Roast on a baking sheet until cooked through and golden.
  4. Add about half to blender. Blend adding oat milk until smooth but not runny. It will get thinner out later by pasta water.
  5. Add salt and pepper to taste, pinch of nutmeg. Maybe ground mustard?
  6. Add to pasta dish, and thin with pasta water until you reach desired consistency.
  7. Enjoy!
