Vegan Chocolate Peppermint Cookies
Ingredients
  • ½ cup vegan butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon peppermint extract
  • 1 tablespoon cornstarch
  • ¼ cup soy milk *or other plant milk
  • 1 ½ cups all purpose flour
  • ½ cup dutch processed cocoa powder *or regular cocoa, see Notes
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup non-dairy chocolate chips or chunks
  • 1 cup crushed candy cane pieces, plus a little more for topping
