Traditionally eaten in Denmark on Christmas.

Fun fact: Mandelgaven (The almond present) is a favorite pastime when serving this dessert. When the Risalamande is served, it’s both a very delicious dessert and a funny game. The Risalamande contains a lot of chopped almonds. It’s tradition that the person who makes the dessert leaves one almond unchopped. This extra whole almond is now mixed into the Risalamande. When the dessert is served the person who gets the whole almond in his/hers serving - they win a prize. The prize is typically a smaller present worth about 15-20$.

Fun fact: The word Risalamande comes from the French word Riz à l’amande, which directly translated means rice with almonds.

Ingredients
  • 1 Tbsp butter, salted
  • 1 cup Arborio rice
  • 3 cups whole milk
  • 1 Tbsp vanilla extract
  • ⅓ cup white sugar
  • ¼ tsp kosher salt
  • 3 egg yolks
  • ¾ heavy whipping cup cream
  • Flaked almonds
  • 1 can Cherry Pie Filling
  • ¼ tsp almond extract
Steps
  1. Preheat the Instant Pot by pressing sauté.
  2. Rinse the rice well using a colander. Use cold water.
  3. Melt the butter in the IP, and add the rice. Cook for a minute or two.
  4. Add milk, vanilla, sugar and salt.
  5. Put the lid on and seal valve.
  6. Press the porridge function to cook for 20 mins.
  7. Perform a QR and take off the lid.
  8. Quickly whisk the cream and egg yolks in a measuring cup.
  9. Press the sauté function on the IP, then pour the cream and egg yolks into the rice while whisking gently until it comes to a simmer and starts to thicken (about 5 min). After five minutes, press cancel so it stops cooking (the pudding will continue thicken as it cools).
  10. In a small saucepan, add the cherry pie filling and almond extract.
  11. Heat through and then plate the rice pudding, add the cherry sauce on top, and garnish with flaked almonds.
