Cauliflower (Potato) Salad
Ingredients
  • 700g raw cauliflower (this was about 4 cups of large florets)
  • 4 large eggs, hard boiled
  • 40g green onion tops, chopped
  • 120g celery, chopped
  • 175g full fat mayo
  • 1 tsp mustard powder
  • ½ tsp Worcestershire sauce
  • ¼ tsp garlic powder
  • salt and pepper to taste
Steps
  1. I cooked the cauliflower in my instant pot, 3 minutes, quick release and let cool. Use your favourite method of cooking cauliflower, make sure it's not too soft, and let cool before using.
  2. Chop up the cauliflower and add to it the green onions, celery and the egg whites. Set the yolks aside in a measuring cup.
  3. Mash your egg yolks really well. Add enough mayo to make up 1 cup, in my case this was 175g. Mix this really well and add to it the rest of the spices. Add to your cauliflower mixture, and refrigerate.
