Baked Eggs with Swiss Chard and Green Olives
Ingredients
  • 4 strips thick cut bacon, cut into small pieces (optional)
  • 1 tbsp olive oil
  • ½ small yellow onion, diced
  • 2 garlic cloves, minced
  • 4 cups loosely packed swiss chard, stems removed and roughly chopped (about 1 bunch)
  • ½ cup castelvetrano olives, sliced (plus more for garnish)
  • ⅓ cup heavy cream
  • 4 eggs
  • 1 tbsp butter or olive oil
  • ¼ cup panko
  • ¼ cup crumbled feta
  • ½ tsp flaky salt for finishing
  • 1 tsp chives for garnishing
  • 1 loaf of crusty bread for serving
