Moroccan Rice Pilaf
Ingredients
  • 2 tablespoons olive oil
  • ¾ cup blanched almonds, slivered
  • 2 large carrots, peeled and diced
  • 1 medium onion, diced
  • ¾ teaspoon ground cinnamon
  • 1 ¼ cup long grain rice , medley is fine!
  • 3 cups vegetable broth
  • ½ teaspoon salt
  • ⅔ cup dried cranberries
  • 1 tablespoon orange zest of a whole orange
  • juice of one orange
  • ¼ teaspoon cayenne pepper, optional
  • 1 ½ tablespoon fresh chives, minced
