Quick-Braised Swiss Chard, White Beans and Chorizo
Ingredients
  • 1 tablespoon olive oil or vegetable oil
  • ½ cup finely diced yellow onion
  • 8 ounces fresh Mexican chorizo, casings removed
  • 1 teaspoon double-concentrated tomato paste (may substitute 1 tablespoon regular tomato paste)
  • 1 bunch (8 ounces) Swiss chard, stemmed, washed well but not dried, each leaf cut into 4 or 5 pieces
  • Water, as needed
  • Two (15- to 16-ounce) cans cannellini beans, drained and rinsed
  • ½ cup medium-bodied red wine, such as grenache or sangiovese
  • Fine salt (optional)
