Mocha Chip Ice Cream

Ingredients
  • 1 cup whole milk, divided
  • 3 Tbsp. instant coffee (use more or less depending on how strong you like it - I used 3 Tbsp.)
  • 2 cups heavy cream
  • ¾ cup granulated sugar
  • pinch kosher salt
  • 1 cup semi-sweet chocolate chips
Steps
  1. Heat approx. ¼ c. milk in microwave. Add instant coffee and stir to dissolve. Once dissolved, add the rest of the milk to make 1 cup.
  2. In stand mixer, whisk to combine the milk, cream, sugar and salt until the sugar is dissolved. Cover and refrigerate at least 2 hours, or overnight. Whisk mixture together again before pouring into the ice cream maker.
  3. Turn on ice cream maker. Pour the mixture into the mixing bowl of your ice cream maker. Let mix until thickened, about 30 minutes. Add chocolate chips during last minute of churning, just until mixed in.
  4. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer to an airtight container and place in freezer for about 2 hours or longer.
