Stir-Fried Chicken with Spinach and Peanuts
Ingredients
  • 1 lb boneless, skinless chicken thighs, patted dry
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup chicken broth
  • 1 ½ tablespoons soy sauce
  • 1 ½ tablespoons cornstarch
  • 1 teaspoon honey
  • 1 ½ tablespoons olive oil (or peanut oil if you happen to have some)
  • 1 ½ teaspoons sesame oil
  • 1 bunch of green onions, white and green parts separated
  • 2 garlic cloves, finely chopped
  • 1 tablespoon grated fresh ginger
  • ⅛ teaspoon crushed red pepper flakes
  • 4 cups baby spinach
  • ½ cup unsalted roasted peanuts (optional. I didn't have any on hand this time)
  • Cooked rice
