  • 250 g (8.8 oz) pappardelle
  • 1 tablespoon olive oil
  • 2 medium shallots, finely diced
  • 2 celery stalks, finely diced
  • 2 large garlic cloves, finely chopped
  • 300 g (10.5 oz) chestnut mushrooms, sliced
  • 30 g (1 ounce) porcini mushrooms, soaked in hot water and roughly chopped (reserve water)
  • 2 tablespoons fresh thyme, finely chopped
  • 100 ml (3.5 fl oz) dry red wine
  • 2 tablespoons tomato paste
  • 1 x 400 g (14 oz) can green lentils
  • 1 x 400 g (14 oz) can chopped tomatoes
  • Salt and pepper to taste
