Tangzhong Pita Bread (Using Instant Yeast)
Ingredients
  • 4 cups bread flour (1 pound 1.6 ounces or 499 grams [use 1 ounce or 28 grams for Tangzhong and 1 pound .6 ounce or 471 grams for dough]) (See note for accurately measuring flour here)
  • 2 teaspoons instant yeast (6 grams)
  • 1 teaspoon sugar (6 grams)
  • 1 ½ teaspoons kosher salt (if using table salt decrease to 1 teaspoon) (5 grams)
  • 1 ½ cups (12 ounces or 340 grams) water (use 5 ounces (142 grams) for Tangzhong and the rest for dough).  In dry weather you may need an additional 1 to 2 tablespoons water (14 to 28 grams).
