Ingredients
- 3 lbs pork shoulder
- 3.5 oz Achiote paste or powder (one box)
- 1 cup Orange Juice
- ½ cup lime juice
- 2 Banana leaves.
- SALSA CEBOLLA
- 2 red onions, chopped (1 big)
- 1 c. Orange Juice (fresh or refrigerated)
- 1 c. Lime juice (fresh or refrigerated)
- 2 to 6 habanero (or manzano) peppers
- Dried oregano
- NOTES.
- Achiote might be easily found in Mexican little stores, possibly in grocery store, or Amazon.
- Banana leaves might be trickier. Good to have but not essential.I have only seen those in little stores.
Steps
- Cut meat into chunks (1 to 2 inches).
- Place achiote in a bowl and add the juices. Dissolve with a spoon and fork, your fingers, or use immersion blender.
- Pour liquid over pork and marinate in the fridge for a few hours or overnight.
- At least a few hours before dinner. Marinate the chopped onions in the juices, and add the chopped habaneros. Habaneros are super spicy! One might be enough for you; use gloves when handling and remove all seeds and veins. I separated some onion for girls without chilies. Add some dried oregano. In Mexican cooking, you always grind with your hands on top of dish.
- Extend the banana leaves and heat over stove so that they toast a bit/get softened.
- Pour 1 cup water in IP, then put the trivet, place some folded foil on top (in case the leaves are broken). Place one banana leaf on top of trivet, then the other one, perpendicular and both extending over sides of pot. Carefully place the meat on top, and pour juices. Fold the banana leaves.
- (For me, the leaves broke, so I put them in pieces and more on top).
- Cook on HP for 50 minutes. You can do QR or NPR.
- Serve with refried black beans and tortillas. Each person can make their own taco and serve the salsa on to their plate or taco.
Notes
- Everybody loved it. Practically no leftovers.
