Salmon Cakes with Lemon Herb Sauce
Ingredients
  • 1lb of cooked / leftover salmon (You can also use canned salmon)
  • ¼ cup of green onion
  • ¼ cup of finely chopped red bell pepper
  • ¼ cup of Mayonaise
  • 1 tablespoon of lemon juice
  • ¼ tsp of salt
  • Cayenne (red) pepper to taste
  • 1 Egg - Beaten
  • 1 cup of Italian bread crumbs
  • 3 tablespoons of butter
  • subheading: Lemon Herb Sauce:
  • ¾ cup of Mayonaise
  • 1 tablespoon of lemon juice
  • 1 tablespoon of horseradish sauce
  • 2 ½ teaspoons of fresh thyme or 1 teaspoon of dried thyme
  • Salt and pepper to taste
