Andy's Ham and Bean Soup
Ingredients
  • 2 to 3 carrots
  • 3 to 4 stalks celery
  • 1 whole onion
  • ~2 TBSP olive oil
  • 6 to 7 cups chicken stock
  • 3 15-oz cans white beans
  • 1-plus lb of ham, chopped into bite-sized pieces.
  • 2 to 3 TBSP tomato paste
  • 1 cup sake
  • 1 TBSP garlic
Steps
  1. Medium-fine chop all veggies. Sautee until just soft/brown with olive oil in soup pot.
  2. Add garlic, let it get fragrant for 30 to 60 seconds.
  3. Add chicken stock, remainder of ingredients. Let simmer for about an hour. Serve
