thai fried rice with tofu, asparagus and pineapple

  • 2 t roasted peanut oil
  • 2 t minced ginger
  • 1 t minced garlic
  • ½ t crushed red pepper
  • 1 (9.2 oz) pkg original grilled tofu such as marjon
  • ¼ c flaked sweetened coconut
  • 1 T light brown sugar
  • 1 large egg
  • 3 c bok choy about 1 large head
  • 1 ½ c frozen cut green beans
  • ¼ c chopped dry roasted cashews
  • 2 c cooked jasmine or basmati rice
  • 2 T soy sauce
  • 4 lime wedges
  • 2 t ls soy sauce
  • 1 t dark sesame oil
  • ¼ t fresh lemon rind
  • 1 t lemon juice
  • 1 lb asparagus spears
  • 1 t sesame seeds
  • 4 c pineapple chunks
