Instant Pot Yankee Pot Roast
Ingredients
  • 1 (3½ -pound) boneless beef chuck roast
  • Diamond Crystal brand kosher salt
  • Freshly ground black pepper
  • 2 tablespoons ghee, divided
  • 2 medium leeks, white and light green ends only, cleaned, trimmed, and thinly sliced
  • 1 celery stalk, finely chopped
  • 1 medium carrot, finely chopped
  • 2 garlic cloves, smashed and peeled
  • 1 tablespoon tomato paste
  • ¼ cup aged balsamic vinegar (but not the super expensive stuff)
  • ½ ounce dried porcini mushrooms, rinsed
  • 2 sprigs fresh thyme
  • 1 cup bone broth or chicken stock
  • 3 medium carrots, cut into 1-inch pieces
  • ¼ cup chopped fresh Italian parsley
