Southwest Eggrolls
Recipe makes a huge batch, because these are so good they disappear quickly!

Ingredients
  • 4 tbsp vegetable oil
  • 4 boneless, skinless chicken breast halves
  • 8 tbsp minced green onion
  • 8 tbsp minced red bell pepper
  • 1 ⅓ cup frozen corn kernels
  • 1 cup black beans, rinsed and drained
  • 8 tbsp frozen chopped spinach, thawed    and drained well (squeeze excess water)
  • 8 tbsp diced jalapeno peppers
  • 2 tbsp minced fresh parsley
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tsp Tony Cachere's Seasoning
  • 1 ⅓ tsp salt
  • ½ tsp ground cayenne pepper
  • 3 cups shredded Monterey Jack cheese
  • 2 packs egg roll wraps (40 wraps)
  • 1 quart oil for deep frying
Steps
  1. Rub 2 tablespoons vegetable oil over chicken breast. In a large saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
  2. Heat remaining 2 tablespoons vegetable oil in saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
  3. Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 10 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese until melted.
  4. Spoon even amounts of the mixture, approximately 1.5 heaping tablespoons, into each egg roll wrapper.  Wrap and seal tightly.  (Watch a  YouTube video if you have to, but make sure to wrap correctly so they don't bust open when frying.)
  5. Deep fry at 375 degrees for about 5 minutes or until dark golden brown. Drain on paper towels before serving.
Notes
  • * Pairs great with "Amy's Cilantro Cream Sauce" at allrecipes.com.
  • * Although the filling freezes and thaws beautifully, I don't recommend wrapping and them freezing since the wrappers DON'T freeze and thaw well. Make extra filling, freeze it, thaw later and then wrap with fresh wrappers, fry and enjoy!
