Cheesy Beef Enchilada Tortellini Skillet

8 ounces cheese tortellini

1 pound ground beef

1 ⁄2 diced onion

1 tablespoon minced garlic

1 tablespoon taco seasoning mix

1 cup water or beef broth

2 cups enchilada sauce (red)

1 can black beans (rinsed and drained)

1 cup frozen corn (I didn't add the corn in the video. But I did add about half a can of fire roasted tomatoes)

1 cup shredded cheese (cheddar, or Monterey Jack are perfect but use what you have)

1 ⁄4 cup sour cream

chopped green onions to garnish
