Ingredients
  • 3 Roma tomatoes , diced
  • 1 15 oz can black beans , rinsed and drained
  • 1 15 oz can black eyed peas , rinsed and drained
  • 1 ½ cups frozen sweet corn
  • 1 bell pepper, diced ( half of 2 different colors)
  • ⅓ cup red onion, diced
  • 1 jalapeno pepper, seeds removed, diced into very small pieces
  • ⅓ cup Cilantro, finely chopped
  • Cucumber, diced
  • Olives, chopped
  •  
  • 2 ripe avocados diced, served on the side!
  •  
  • subheading: DRESSING:
  • ⅓ c Aqua faba
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons lime juice (fresh preferred)
  • ½ teaspoon salt (opt)
  • ½ teaspoon pepper (garlic pepper?)
  • ¼ tsp garlic powder
  • 1 tsp Cumin
  • Cholula…optional
  • ¼ to ½ c Pickled jalapeños, diced finely
  • Jalapeño juice, from pickled ones
  •  
  • Tortilla chips , for serving
Steps
  1. Combine tomatoes, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
  2. In a separate bowl, whisk together aqua faba, lime juice, red wine vinegar, salt, pepper, and garlic powder....etc
  3. Pour dressing over other ingredients and stir/toss very well.
  4. Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.
Notes
  • Another variation...
  • Southwest Salad
  • 2 -15 oz. cans Black Beans, drained and rinsed
  • 2 -15 oz. can corn, drained Or frozen. Trader Joe's brand for the crunch)
  • 1 15 oz. jar Hearts of Palm, drained,and sliced...(or Artichoke Hearts)
  • 1 small red Onion, chopped small
  • 4 cloves Garlic, chopped small
  • ½ bunch Cilantro, chopped
  • ----
  • ¼ cup lime juice
  • ¼ cup vinegar (wine or cider)
  • 1 tsp. cumin
  • 1 tsp oregano
  • Cholula, a few dashes
  • black pepper
  • 1 avocado, chopped...on th side
  • Combine first 6 ingredients in a large bowl.
  • Make vinaigrette with the remaining ingredients, and pour it over the salad. Serve.
  • Take avocado on the side...
