  • 1 ½ pounds Brussels sprouts, trimmed and halved or quartered if large
  • ½ small red onion, sliced
  • 3 cloves garlic, smashed
  • 1 pound boneless, skinless chicken thighs, trimmed
  • Chopped fresh thyme for garnish
